2 avocados roughly mashed
½ red onion finely sliced
8 cherry tomatoes quartered
100g feta crumbled
1 Tbsp olive brine
2 limes
Salt and pepper to taste
Mix the cherry tomatoes, red onion and feta into the mashed avocado before adding the olive brine and a good squeeze of lime juice.
Taste, and season to your likening.
Serve with tortilla chips or dolloped onto toasted sourdough.
